ORANGE IMPATIONATA 
2 env. unflavored gelatin
2 c. orange juice, divided
1 c. carrots, cut into 2 inch chunks
1 1/3 c. cottage cheese
Artificial sweetener to equal 10 tsp. sugar
1 tbsp. lemon juice
1/4 tsp. almond extract
1/8 tsp. salt

Sprinkle gelatin over 1/4 cup orange juice in a saucepan to soften. Place over low heat until dissolved. Remove from heat. Pour remaining orange juice into blend, add carrots and blend until smooth, add cottage cheese, artificial sweetener, lemon juice, almond extract, salt and cooked gelatin mixture. Blend at high speed approximately 3 minutes. Pour into a mold. Place in refrigerator until set. Makes 4 servings. This was not meant to be a dessert but no matter how you use it as a salad or dessert, it's yummy.
