BANANA BREAD 
1/2 c. cooking oil
1 c. sugar
2 eggs
1 c. mashed ripe bananas
1 tsp. lemon juice
2 c. sifted flour
1 tsp. baking soda
1 tsp. salt
1 c. nutmeats, chopped

Cream oil and sugar together. Beat eggs until light and add. Press bananas through sieve or mash well with a fork and add lemon juice. Blend with creamed mixture. Sift flour, soda and salt together and mix quickly into banana mixture. Add nuts. Bake in greased loaf pan in moderate oven (350 degrees) about 1 1/4 hours. Makes 1 1-pound loaf.
