1 egg
3/4 c. butter
1 tsp. vanilla
1 pkg. devils' food cake mix
1/2 gallon ice cream

Beat egg, butter, and vanilla. Stir in cake mix. Batter will be very stiff. Roll dough in 1" to 1 1/2" balls. Flatten on ungreased cookie sheet with bottom of glass. Bake 6 to 8 minutes at 350 degrees. Prick cookies with fork. Cool on cookie sheet. Put one scoop of ice cream between 2 cookies. Wrap in plastic wrap and freeze. Makes 1 dozen sandwiches.
