AMISH SUGAR COOKIES 
1 c. softened butter
1 c. sugar
2 eggs, beaten
1 c. confectioner's sugar
2 tsp. vanilla
3/4 tsp. cream of tartar
1/2 tsp. salt
1 c. oil
4 1/2 c. flour

Cream butter and sugar until light and fluffy. Beat in eggs. Beat in confectioner's sugar, vanilla, cream of tartar and salt. Alternately beat in oil and flour; beat until smooth and fluffy. Refrigerate dough, covered for 2 hours or until cold. Roll rounded tablespoons into balls. Place 2 inches apart on lightly greased baking sheet. Flatten each with bottom of glass that has been lightly oiled and dipped in sugar. Bake at 350 degrees for 8 to 10 minutes or until lightly browned. Cool on wire rack. Makes 5 dozen.
