BANANA BREAD 
Generous 3/4 c. mashed banana
1/3 c. vegetable oil
4 egg whites or 2 extra lg. eggs
1/2 c. water
2 c. all-purpose flour
Scant 1/2 tsp. cinnamon
Scant 1/2 tsp. nutmeg
1 c. chopped nuts (optional)
Generous 1 tsp. baking soda
Generous 2 1/4 tsp. baking powder

1. Preheat oven to 325 degrees. Coat a 9 x 5 x 2 3/4 inch loaf pan with vegetable oil or vegetable shortening.

2. In a large bowl, and using a hand-operated mechanical beater, whip together banana, oil, eggs, and water.

3. Add flour, cinnamon, nutmeg, and nuts. If desired, to banana mixture; mix. Stir in baking soda and baking powder quickly, and then mix (28 to 30 beats). Immediately pour batter into prepared pan.

4. Bake 50 to 53 minutes or until a knife inserted in the center of the loaf comes out clean. Loosen bread from pan with a knife and turn loaf out onto a wire rack to cool. To store, wrap cooled loaf in plastic and refrigerate or freeze. Yield: one 9 x 5 x 2 3/4 inch loaf (12 slices).
