POTATO WEDGIES 
3 med. baking potatoes (about 1 1/4 lb.)
1/3 c. unsalted butter
2 1/2 tsp. Mrs. Dash seasoning
Optional:
1/2 c. shredded natural brick, cheddar, colby, Monterey Jack, mozzarella or Swiss cheese

SOUR CREAM DIP:

1 c. dairy sour cream
1 tbsp. Mrs. Dash seasoning

Combine sour cream and Mrs. Dash for dip, cover and chill. Preheat oven to 375 degrees. Scrub potatoes, pat dry and cut each lengthwise into 8 wedges. Melt butter in small saucepan; add Mrs. Dash. Dip potato wedges into butter mixture coating all sides.

Place in a single layer on a 15 x 10 inch shallow pan, cut side down. Spoon remaining butter mixture over potatoes. Bake 30 minutes, turn and continue baking for 20-25 minutes until golden brown and edges are crisp. If desired, sprinkle cheese over potatoes and continue baking 3-5 minutes until cheese is melted. Drain on absorbent paper. Serve with sour cream dip or Mrs. Dash steak sauce.
