GROUND NUT STEW 
Chicken or beef
1 tsp. salt
2 onions, sliced
1/4 tsp. cayenne pepper
3-4 c. boiling water
1/2 c. peanut butter
1 tbsp. ginger
1/2 c. cooking oil
3 tomatoes, chopped
1/4 tsp. black pepper
1 chili pepper
Okra pods, optional

Cut meat into small pieces (stew sized). Pat with salt and ginger. Brown in hot oil and drain. Saute onions in oil. Add tomatoes and peppers; stir until mixture comes to a boil. Lower heat and cook for 5 minutes. Stir in boiling water, chili pepper, peanut butter and okra. Return meat to pot and cook until meat is tender.
