LOW-FAT BRAN MUFFINS 
1 1/4 c. all-purpose flour
1/2 c. sugar
1 tbsp. baking powder
1/4 tsp. salt
1 tbsp. cinnamon
2 c. Kellogg's All-Bran extra fiber cereal
1 1/4 c. milk
1/2 c. applesauce
1/2 c. raisins
1 mashed banana

Stir together flour, sugar, cinnamon, baking powder and salt. Set aside.

In large mixing bowl, combine cereal and milk and let stand about 5 minutes or until cereal softens. Add egg and applesauce and beat well. Add flour mixture, stirring only until combined. Add raisins and banana. Coat twelve 2 1/2-inch muffin pans with vegetable cooking spray. Portion batter evenly into cups and bake at 400°F about 20 minutes or until lightly browned.

Note: Banana is optional.
