ALMOND DATE BARS 
1 c. finely chopped almonds
3/4 c. matzo meal
1/3 c. sugar
1/2 c. parve butter
1 c. pitted dates
1/4 c. fresh orange juice
2 tsp. grated orange (lemon) rind

Beat the almonds with the matzo meal, sugar and butter until the mixture is moist and crumbly. (Save 1/4 cup for the top.) Firmly pack mixture into bottom of 9 inch square pan (lightly greased). Chop the dates, beat well with the orange juice and rind, until spreadable. Spread over the mixture already in the pan. Sprinkle rest of crumbly mixture on the top. Bake at 350 degrees for 30 minutes. Cool. Cut into 24 squares.
