COCONUT POUND CAKE 
6 eggs
3 sticks butter
3 c. sugar
1 c. sweet milk
3 c. flour
2 tsp. vanilla extract
2 tsp. lemon extract
1/2 c. cream of coconut or flake coconut

Grease and flour 10" tube pan or bundt pan. Set oven at 350 degrees.

In a large mixing bowl cream butter gradually add sugar mixing, add 1 egg at a time, mixing, then beat until well mixed. Add 1 cup flour and mix, then add 1/2 cup milk and cream of coconut or flakes. Mix well using electric mixer, beat about 2 minutes at medium speed, while blending gradually adding flour and milk alternating, flour first, milk last then add the remaining coconut, continuing to mix. Add both vanilla and lemon extract. (Mixture should be smooth.)

Pour ingredients in 10" tube pan (or bundt) and bake for 45 minutes or until toothpick comes out clean when inserted in middle.
