PORK CHOP WITH RICE 
4 pork chops
2 tbsp. fat
1 c. uncooked rice
2 c. canned tomatoes
1 medium onion
3 tsp. salt
1/4 tsp. pepper

Brown pork chops in fat in pressure saucepan. Remove chops from pan. Add tomatoes, chopped onion, salt, pepper and rice. Lay pork chops over the top. Cover and bring to 15 pounds pressure. Cook 15 minutes.

A covered frying pan can be used instead of pressure saucepan by adding 1 1/2 cups of water and increasing cooking time to 35 minutes.
