WHOLE WHEAT ZUCCHINI BARS 
3 eggs
1 1/2 c. sugar
1 c. oil
1 1/2 c. whole wheat flour
1/2 c. all-purpose or unbleached flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
2 c. shredded zucchini
1 c. currants or raisins

GLAZE:

1 c. powdered sugar
1/4 tsp. cinnamon
2 tbsp. butter, melted
2 tbsp. milk

Heat oven to 350 degrees. Grease 13 x 9 inch pan. In large bowl beat eggs. Add sugar and oil; beat well. Lightly spoon flour into measuring cup; level off.

In medium bowl, combine whole wheat flour, all-purpose flour, baking powder, salt and 1 teaspoon cinnamon. Add flour mixture to egg mixture; mix well. Stir in zucchini and currants. Spread in prepared pan. Bake at 350 degrees for 40-50 minutes or until toothpick inserted in center comes out clean. Cool completely.

In small bowl, combine all glaze ingredients until smooth. Spread evenly over cooled bars. Cut into bars. Makes 36 bars.
