ZUCCHINI MUFFINS 
3 eggs
1 c. corn oil
1 tbsp. vanilla
2 c. shredded zucchini, unpeeled
1 1/2 c. sugar
2 c. unsifted all-purpose flour
1 tbsp. cinnamon
1 1/2 tsp. baking soda
1 c. chopped nuts
1 1/4 tsp. salt
1/4 tsp. baking powder

Combine beaten eggs, oil and sugar. Add remaining ingredients by hand. Fill paper muffin cups 2/3 full. Bake at 400 degrees for 15 minutes. Makes 24 muffins.
