PUMPKIN - OAT MUFFINS 
2 lg. egg whites
1/2 c. brown sugar
1 1/4 c. skim milk
2 tbsp. Puritan oil
3/4 c. canned pumpkin
3/4 c. whole wheat flour
1 tbsp. baking powder
1/2 tsp. salt (optional)
1 tsp. cinnamon
1/2 tsp. each cloves, nutmeg and allspice
1 1/3 c. oat bran
1 c. uncooked rolled oats
1/2 c. raisins

Preheat oven to 400 degrees. Grease 12 muffin pan cups with non - stick cooking spray. Combine flour, baking powder, salt and spices in a large bowl; mix. Add oat bran and oats; mix. Set aside. Beat egg whites until frothy; add sugar, milk, oil and pumpkin and beat well. Add dry ingredient mixture and beat only until all ingredients are moistened. Stir in raisins. Bake 20 to 25 minutes until lightly browned.
