SWEET POTATO BREAD 
1 pkg. yeast
1/4 c. warm water

Dissolve yeast in warm water. 3 tbsp. oil 1 1/2 c. mashed sweet potatoes 2 tbsp. maple syrup 1 c. whole wheat flour

Add to dissolved yeast. Mix well to make a smooth sponge. Cover and set in a warm place to rise about 30 minutes.

Add enough flour to make an elastic dough. Cover and let rise until about double. Punch down. Mold into loaves. Put in greased pans and allow to double. Bake at 350 degrees for 30 to 40 minutes. Makes 2 small loaves.
