PINEAPPLE UPSIDE DOWN CAKE 
1/4 c. shortening
3/4 c. sugar
1 egg
1/2 c. milk or pineapple juice
1 1/2 c. sifted flour
1/2 tsp. salt
2 tsp. baking powder

Blend shortening with sugar and egg until creamy. Add sifted dry ingredients alternately with milk or pineapple juice. #1 or 2 can sliced pineapple 1 c. brown sugar

Melt shortening in bottom of iron skillet. Add brown sugar. Blend thoroughly and spread evenly in bottom of skillet. Arrange pineapple slices over surface of mixture, placing a cherry in the center of each slice. Cover with butter. Bake at 350 degrees for 50 to 60 minutes.
