COCONUT CHESS PIE 
4 eggs
4 tbsp. butter, melted
1 3/4 c. sugar
1 tsp. vanilla
Juice of 1 lemon
6 oz. pkg. frozen coconut, thawed
2 unbaked pie shells

Mix all ingredients together and pour into the 2 unbaked pie shells. Bake in moderate oven (350 degrees) until lightly browned and firm.

Small can of drained crushed pineapple can be used instead of the coconut.
