1 bunch of fresh parsley
1 head garlic
1/2 c. olive oil
4 hard-boiled egg yolks
3 scallions
1 c. light cream

Saute on low heat garlic and onions in olive oil. Blend egg yolks, adding cream until thick. Combine and pour over baked snapper.
