QUICK-TO-FIX TACO SALAD | |
1 lb. ground turkey sausage or bulk pork sausage 1 (11 oz.) can enchilada sauce 1 (4 oz.) can diced green chili peppers, drained 1 (4 oz.) can sliced mushrooms, drained 1 sm. head lettuce, shredded (6 c.) 1 (4 oz.) pkg. (1 c.) finely shredded Cheddar cheese Tortilla chips Dairy sour cream (optional) In a large skillet cook the turkey or pork sausage until browned. Drain off fat. Stir in enchilada sauce, drained chili peppers, and drained mushrooms. Bring sausage mixture to boiling. Reduce heat. Simmer, uncovered, for 2 minutes. Meanwhile, place the shredded lettuce in a large salad bowl. Spoon the sausage mixture atop. Sprinkle with the shredded Cheddar cheese. Toss just before serving. Serve with tortilla chips and dairy sour cream, if desired. Makes 6 servings. |
