DIABETIC OVEN FRIED CHICKEN 
1/4 c. wheat germ
1/4 c. potato flakes
1/4 c. buttermilk
1/2 tsp. paprika
1/2 tsp. salt
1/2 tsp. garlic salt
Dash of pepper
1 fryer, cut up

Sprinkle chicken with salt and pepper; let stand for 1/2 hour or longer. Then dip chicken in buttermilk and shake in plastic bag in which you have combined wheat germ, potato flakes, garlic salt and paprika. Place chicken in pan sprayed with non-stick spray. Bake at 350 degrees for 35 minutes or until brown.
