APRICOT MERINGUE TARTS | |
1 tbsp. cornstarch 1 c. butter 1/2 c. powdered sugar 1 3/4 c. flour 1 tsp. apricot butter (1 tsp. in each tart) 1/2 c. sugar 1 egg 1 c. fine dried coconut Mix cornstarch, butter, sugar and flour. Press into mini tart pan. Add apricot butter by teaspoon, using 1 teaspoon on each tart. Combine sugar, egg and dried coconut for filling. Put a little on apricot butter mixture. Bake at 350 degrees for 20 minutes. Makes 32 to 36 tarts. |
