SAUSAGE AND EGGS 
1 lb. smoked sausage, chopped
1 c. fresh sliced mushrooms
1/2 onion, chopped
Jalapeno peppers (optional)
6 slices white bread, 1/2 inch cubes
1 c. shredded Cheddar cheese
6 eggs
2 c. milk
1 tsp. dry mustard
1/2 tsp. celery salt
1 tsp. oregano

Combine sausage, mushroom, onion, peppers and saute in large skillet until tender. Drain well. Place white bread in lightly greased baking dish. Top with sauteed mixture and cheese.

Combine remaining ingredients. Beat well; pour over cheese. Cover and refrigerate 8 hours or overnight. Bake uncovered at 325 degrees for 40-45 minutes. Serves 6 to 8.
