PORK & TURKEY SENSATION 
1 (6 oz.) pork tenderloin
1/2 onion, sliced
1 (16 oz.) sauerkraut, drained
1 med. apple, peeled & diced
2 whole cloves
1/4 tsp. dried thyme
2 bacon slices
1 lg. garlic clove, minced
1 med. Russet potato, peeled & diced
1 c. apple cider or juice
1 sm. bay leaf
12 oz. smoked turkey breast, cut into 1/4 inch thick slices

Season pork and roast in 350 degree oven for about 40 minutes. Meanwhile, cook bacon until crisp. Drain and add onion to pan and saute until tender. Stir in garlic and continue cooking 1 minute. Add sauerkraut, potato, diced apple, apple cider, cloves, bay leaf and thyme. Cover and simmer until potato is tender, about 15 minutes. Add turkey slices. Cover with sauerkraut mixture. Cover and bake until turkey is heated through, about 5 minutes.

Transfer mixture to platter. Slice pork tenderloin. Arrange slices atop sauerkraut mixture. Sprinkle with bacon and parsley. Makes 4 to 6 servings.
