OOH IT'S SO GOOD GARDEN RICE
SALAD
 
4 c. rice, cooked
1 (10 oz.) pkg. frozen peas, thawed, uncooked
1/2 c. green pepper, diced
1/2 c. celery, finely diced
1/4 c. mayonnaise
2 tbsp. scallions, finely chopped
2 tbsp. radishes, finely chopped
1 clove garlic, minced
1/4 tsp. salt
2 tbsp. honey
1 tsp. curry powder
1/2 tsp. nutmeg

Combine all ingredients in a medium salad bowl. Chill for 3 to 4 hours. Serve well chilled. Makes 6 to 8 servings.

Optional: Substitute red peppers for green peppers, onions, instead of scallions, garlic powder instead of fresh garlic. Add some fresh parsley or chopped cucumber and use brown rice for a change of taste.
