HOT SAUCE (FOR CANNING) | |
8 med. onions 6 green peppers 12 hot peppers 1 c. celery 1 c. oil 1 tbsp. cayenne pepper Less than 1/4 c. sugar 1 peck tomatoes Salt to taste Chop all vegetables real fine, soak in oil. Scald, peel and take out as many seeds as you can of the tomatoes. Put vegetables and tomatoes in large aluminum kettle. Add sugar, salt, and cayenne pepper. Bring to a boil and boil 2 hours. Put in hot canning jars with hot lids and let seal. When ready to eat sauce, add 1/4 cup Minute rice to a pint of sauce and cook 5-6 minutes until rice is done. Very good with fried chicken and French fries. |
