OATMEAL MIX 
7 c. sifted flour
3 1/2 c. sugar
1 1/2 tbsp. salt
1/4 c. baking powder
1 lb. 4 oz. box quick cooking, rolled oats
1 lb. (2 1/4 c.) shortening

Sift first 4 ingredients 3 times. Cut in shortening until mixture has consistency of corn meal. Add rolled oats and mix well. Store in covered container at room temperature. Makes about 20 cups. To measure, pile lightly into measuring cup and level off.

How to use:

SPICE DROP COOKIES (WITH OATMEAL MIX) :

3 c. mix
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
1/2 c. nuts, chopped (optional)
1 egg
1/4 c. melted butter
1/3 c. milk

CHOCOLATE CHIP (WITH OATMEAL MIX) :

3 c. oatmeal mix
1/3 c. brown sugar
8 oz. chocolate chips
1 egg
1 tsp. vanilla
1/4 c. milk

Mix. Drop. Bake at 350 degrees until light brown.

HERMITS (WITH OATMEAL MIX) :

3 c. oatmeal mix
1 tsp. cinnamon
1/2 tsp. cloves
1/4 c. brown sugar
3/4 c. mixture of chopped nuts and raisins
1 egg
1/4 c. milk

Mix. Drop. Bake at 350 degrees.
