OATMEAL COOKIE MIX 
4 c. sifted flour
3 tsp. salt
2 tsp. baking soda
2 1/2 c. granulated sugar
1 c. brown sugar, packed
2 c. shortening
4 c. rolled oats quick cook or regular

Combine flour, salt, soda, and granulated sugar; sift into large mixing bowl. Add brown sugar and shortening. Mix with pastry blender until mixture resembles fine crumbs. Stir in oats. Store mix in airtight container in refrigerator. Use as needed. Makes about 12 cup of mix.

OATMEAL COOKIES:

3 c. oatmeal cookie mix
1 egg
1/4 c. milk
2 tsp. vanilla

Place cookie mix in medium mixing bowl. Combine egg, milk, and vanilla; beat well. Add liquids to cookie mix; stir until well blended. Drop by level tablespoons 2 inches apart on lightly greased baking sheets. Bake at 350 degrees until done and golden brown, about 10 minutes. Transfer hot cookies to wire rack to cool. Yields about 3 dozen.
