SPLIT PEA SOUP 
1/2 lb. bacon, raw cut up into 1" slices
3 med. onions, diced
2 lg. stalks celery, diced
2 sm. carrots, diced
1 bag dried split peas
1 lb. ditalini macaroni (or any sm. pasta)
Grating cheese

Sort out peas and look for any debris. Wash several times. Pour enough water on top of split peas, about halfway over peas. Add bacon, onions, celery and carrots. Let boil with cover on and then simmer for 2-2 1/2 hours. Cook pasta separately until halfway cooked. Strain and finish cooking in soup. Sprinkle with grating cheese.
