SOUTHWESTERN BEEF & CORN BREAD

2 tbsp. vegetable oil
2 lbs. lean ground beef
3/4 c. chopped onions
1 clove garlic
1 (8 oz.) can mild or hot chili salsa
1/3 c. sliced black olives
1/2 tsp. dried oregano leaves
1/4 tsp. ground cumin
1/4 tsp. salt
1/4 tsp. pepper
2 (8 1/2 oz.) pkgs. corn muffin mix
2 eggs
2/3 c. milk
2 to 3 tsp. chili powder
1 c. shredded cheddar cheese

Cook in an electric frying pan. Heat fry pan at 300 degrees. Add oil, beef, onion and garlic; cook until beef is browned, stirring occasionally. Drain excess fat. Stir in salsa, olives, oregano, cumin, salt and pepper; cook, covered, at 200 degrees for 5 minutes.

Make corn muffin mix according to package directions, using eggs, milk and chili powder, fold in cheese. Spoon batter over beef mixture in fry pan; cook at 225 degrees, with cover ajar 1 inch, until batter is cooked through, about 20 to 25 minutes. Serves 8.
