BROCCOLI - CHICKEN AND RICE
CASSEROLE
 
2 c. cooked rice
2 (10 oz.) pkg. broccoli
2 c. or more chicken or turkey, chopped
1/2 lb. Velveeta cheese
1/4 c. butter
1/4 c. flour
1 c. milk

Cook and debone chicken. Cook rice. Thaw and lightly cook broccoli. Make cheese sauce by melting butter; add flour and milk; when slightly thick, add Velveeta cheese and melt together. Layer in 9 x 13 inch glass pan starting with rice, broccoli and chicken. Pour cheese mixture over top. Cover with tin foil. Bake at 350 degrees for 25 minutes.
