SHEPHERD'S PIE 
4 medium potatoes
1 lb. ground meat
1 large onion, chopped
garlic to taste
1 large carrot, chopped
1 c. green peas
1 c. corn
1 can vegetable soup

Peel, dice and boil potatoes, then mash. Brown meat (you can use beef, turkey or combination) with onion and garlic. Cook carrot in microwave. Add all veggies to meat; stir in soup. Pour into casserole dish; top with mashed potatoes.

Bake at 350°F for 30 minutes or until golden.

Since microwave ovens vary in power, you may need to adjust your cooking time.
