STUFFED ZUCCHINI 
1 (8") zucchini
1/2 lb. hamburger
1 sm. onion
3 tbsp. butter
1 med. tomato
1/2 c. fine bread crumbs
1 tsp. salt
1/8 tsp. pepper
1/2 tsp. oregano
1 tbsp. parsley
1/2 c. cheddar cheese

Cut zucchini in half lengthwise. Scoop out pulp. Pare boil shells. Saute hamburger and onion in butter. When lightly brown add diced tomato. Chop zucchini pulp, add to hamburger. Add bread crumbs and spices. Mix well. Put zucchini shells in baking dish. Fill shells with hamburger mixture. Add 1/4" water in dish. Cover. Bake at 375 degrees for 20 to 30 minutes. Sprinkle with cheese. Return to oven. Bake 5 minutes or until cheese melts.
