FRESH ASPARAGUS SOUP 
1 lb. fresh asparagus or broccoli, chopped
1/4 c. chopped onion
1 c. chicken broth

Cook in covered saucepan. When asparagus is just tender, if desired, press through food mill or blend until smooth.

2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
Dash of pepper
1 additional c. chicken broth
1 c. milk
1/2 c. sour cream or plain yogurt
1 tsp. fresh lemon juice

Heat butter, flour, salt, and pepper in a saucepan. Stir in chicken broth. Cook over medium heat, stirring constantly, until mixture reaches boiling point. Stir in asparagus or broccoli puree and milk. Stir a little hot mixture into sour cream or yogurt. Stir into hot mixture. Add lemon juice. Heat just to serving temperature, stirring frequently. Sprinkle with fresh chives. Makes 4 servings.
