CONGEALED SHRIMP SALAD 
1/2 env. unflavored gelatin
1 (3 oz.) cream cheese
1/2 c. cold water
1 1/2 c. mayonnaise
2 tsp. fresh lemon juice
1 tsp. fresh minced parsley
2 c. cooked, chopped shrimp
1 tbsp. fresh minced onion
Salt to taste

Dissolve gelatin in water. Put over hot water to melt. Whip soft cream cheese with mixer and add gelatin. Mix thoroughly. Add mayonnaise and lemon juice. Fold in other ingredients and add salt. Pour into oiled one quart mold or either in individual mold. Chill until congealed. Unmold.

This can be decorated with fresh parsley and is good with crisp bread or crackers.
