EGGPLANT PARMESAN 
1 lg. or 2 sm. eggplants
2-3 eggs, depending on size
Progresso Italian bread crumbs
Corn oil
Fresh garlic, mashed
Dried onion flakes
Mozzarella cheese
Parmesan or Romano cheese
Ragu Spaghetti Sauce

Peel and slice eggplant. Soak in salted water at least 30 minutes. Drain. slice Mozzarella cheese. Beat 2 to 3 eggs in a dish. Mix bread crumbs and onion flakes in another dish. Heat oil in skillet and lightly brown mashed garlic cloves. Dip eggplant slices in egg and then in bread crumbs mixture. Fry until golden. Layer eggplant, cheeses and Ragu in casserole. Bake 30 to 45 minutes at 350 degrees.
