GREEN PEA SALAD WITH MINT 
2 (10 oz.) pkgs. frozen baby peas
3 carrots, peeled & shredded
2/3 c. thinly sliced scallions with tops
1/2 c. chopped parsley
1/4 c. chopped mint
1/2 c. fruity olive oil
8 tbsp. red wine vinegar
1 tsp. salt (optional)
1/2 tsp. pepper

1. Combine vegetables, parsley and mint.

2. Whisk together olive oil, vinegar, salt and pepper.

3. Toss together, chill and serve cold. Serves 8 to 10.
