PEAR WATERCRESS SALAD 
The sweetness of pears mingles with the sharp flavor of watercress to create a nice blend of taste and texture. Make it into a main dish luncheon salad by arranging it on 4 lettuce salad plates, if you wish, and top each with a scoop of cottage cheese. Serve with crackers or toast points.

For 4 Servings You Will Need:

2 or 3 Anjou or Bartlett pears
1 bunch watercress
1/3 c. bottled Italian style salad dressing
2 green onions, white part only, finely sliced
1 tbsp. lemon juice
1/2 tsp. onion salt
1/4 tsp. ground ginger

Halve, core and slice pears. Break watercress into bite size sprigs. Add to pears. Mix dressing, onions, lemon juice, onion salt and ginger. Pour dressing over salad and toss to coat evenly. Serve immediately.

TIPS: You may find it easier to make the dressing first and store it in the refrigerator to pour over the salad at serving time. Good served with roast poultry or pork.

For 2 servings half the ingredients. For 8 servings double the ingredients.
