TOUCH OF LEMON SUGAR COOKIES 
2 c. sugar
1 c. soft butter
1 tbsp. grated lemon peel
1/4 c. lemon juice
1 tsp. vanilla
2 eggs
1/2 tsp. salt
1 tsp. baking soda
1 tsp. cream of tartar
3 1/4 c. flour
Sugar to roll balls in

In large bowl, blend first 6 ingredients until smooth. Stir in flour, salt, baking soda and cream of tartar. Chill 1 hour or longer. Preheat oven to 325 degrees. Form dough into 1 inch balls and roll in sugar. Place 2 inches apart on greased cookie sheet. Bake 15-20 minutes until light golden brown. Cool 2 minutes before removing from cookie sheet.
