BLACK BERRY CAKE 
3 cups frozen or canned blackberries or 4 cups fresh
2 cups sugar
1/2 cup vegetable oil
3 eggs
2 cups all-purpose flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 tsp. allspice
1 tsp. nutmeg
1/2 tsp. ginger

Note: If using fresh blackberries, let sugar set for 5 minutes.

Mix all ingredients together. Pour into 3 (9-inch) cake pans or 1 angel food cake pan. Bake 45 minutes at 350°F.

ICING:

1/2 cup (1 stick) butter
1 (1 lb.) box confectioners' sugar
1 (8 oz.) pkg. cream cheese
1 tbsp. vanilla

Mix together and beat until fluffy.
