CHICKEN CACCIATORE 
1 lb. boned chicken, cut in strips
1/2 c. chopped onion
1 med. green pepper, cut in strips
1 garlic clove, minced
2 tbsp. butter
1 (28 oz.) can whole tomatoes
1 (8 oz.) can tomato sauce
1/2 tsp. salt
1/2 tsp. dried oregano leaves
1/2 tsp. dried basil leaves
1/8 tsp. ground red pepper
1 1/2 c. Minute Rice

Cook and stir chicken with onion, green pepper, and garlic in hot butter in large skillet until lightly browned. Add tomatoes, tomato sauce and seasonings. Bring to full boil. Stir in rice. Cover; remove from heat. Let stand 5 minutes. Fluff with fork. Makes 4 servings.

You may use 1 pound cleaned shrimp in place of chicken.
