CREAMY CARROT SOUP | |
2 tbsp. butter 1 medium onion, diced 1 medium potato, diced 1 (14 oz.) can chicken broth 2 c. cooked sliced carrots 1/2 c. half & half or heavy cream Dash of pepper Saute onion in butter until soft. Add potatoes, chicken broth, and some liquid from cooked carrots. Simmer 20 minutes. Place in blender; add carrots and blend on high until smooth. Add cream and pepper. Serve hot or cold. |
