1 pkg. Jiffy corn muffin mix
1 1/2 c. cereal (Special K's)
1 1/2 to 2 lbs. ground beef
2/3 c. chopped celery
1/2 c. chopped onion
1 med. (16 oz.) can tomato sauce (stewed tomatoes, salsa, or combination of same)
Shredded cheese
Seasonings as you desire

Saute celery and onion in small amount of butter until just tender. Add ground beef and brown. Drain excess fat. Add tomato sauce, etc. and simmer for 10 to 15 minutes. Let sit in juices to blend flavors. Mix muffin mix according to package instructions. Add cereal and mix thoroughly. Grease 9 x 9 inch casserole dish. Pat muffin mix in pan as you would a crust - up sides of dish also. Drain meat mixture and place in muffin mix crust. Spread cheese over top and bake according to muffin mix instructions. One dish meal. May be doubled.
