BRAN APPLE COFFEE CAKE 
1 1/2 c. sugar
2 eggs
1 c. applesauce
1 c. boiling water
1/2 tsp. salt
1/3 c. butter
1 c. buttermilk
3 c. bran cereal
2 1/2 tsp. baking soda
2 1/2 c. flour

TOPPING:

1 c. flour
1 tsp. cinnamon
1/2 c. brown sugar
1/2 c. butter

Mix 1 cup of the bran with the 1 cup of boiling water. Cream sugar and butter; beat in eggs, buttermilk, applesauce and softened bran. Stir in dry ingredients including remaining 2 cups of bran; blend well.

Pour into 2 (9x9) or 1 (9x13) greased pan(s). Sprinkle tops with topping as per recipe. Bake at 400 degrees for 30-35 minutes. Serves 18.
