SPINACH PUDDING | |
1 pkg. chopped spinach, cooked and drained 1/2 c. chopped celery 1 1/2 c. grated carrot 1/4 tsp. pepper 3/4 c. Matzo meal or cracker crumbs 1 c. chopped onion 1/4 c. chopped green pepper 1 1/2 tsp. salt 3 eggs, beaten Cook and drain spinach. In oil saute onion, green pepper, celery and carrot. When soft add spinach, salt, pepper, eggs and matzo meal or crumbs. Mix well. Bake in greased 8 x 8 or 9 x 9 inch pan at 350 degrees for 45 minutes. Cut into squares to serve. Can be made ahead, frozen and reheated. |
