POTATO AND EGG PIE 
1 dozen eggs
3 potatoes, diced or cubed
Salt and pepper to taste
2 tbsp. oil

Prepare potatoes and fry in oil until soft. Scramble eggs; add seasonings. Add potatoes. Place in slightly greased fry pan over medium heat. When sides of egg pull away from pan, flip pie over. Continue cooking until firm.

HINT: Use a non-stick fry pan. Also, to flip pie, place a plate over fry pan; turn upside down and return to fry pan.
