EGGPLANT - CORN CASSEROLE | |
1 med. eggplant 1 stick butter 1 can cream style corn (or corn sliced from cob & 1/4 c. milk & 1 tsp. flour) 1 sm. chopped onion 1 chopped bell pepper 1 c. cracker crumbs 1 egg, beaten 1 sm. jar pimentos, chopped 2 1/2 c. grated cheese Cook eggplant in boiling water for 10 minutes, then drain. Mash and add butter. Add the other ingredients, reserving 1 1/2 cups cheese for topping. Bake at 350 degrees for 1 hour. Add reserved cheese, return to oven; bake until cheese is melted. (This is one of the few casseroles that Billy Ray likes.) |
