PEACH COBBLER 
6 to 8 ripe peaches
1/4 c. + 2 tsp. sugar
3/4 c. + 3 tbsp. all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
3 tbsp. butter
1 c. whipping cream

1. Peel and slice peaches. Toss the peaches with 1/4 cup sugar and 3 tablespoons flour. Spoon peaches into an 8-inch-square oiled baking dish.

2. In a large bowl, use a fork to mix up the baking powder, salt, 3/4 cup flour and 2 teaspoons sugar. Cut in the butter with 2 knives used scissor-fashion until mixture becomes coarse crumbs.

Stir in 1/3 cup whipping cream and quickly mix until dough is stiff.

3. Preheat oven to 400 degrees. Turn dough onto lightly floured surface. Roll out dough to about 3/8 inch thickness. Using a cookie cutter, cut out shapes to put on top of the peaches. A mixture of shapes can be attractive.

4. Place biscuits on peaches. Brush lightly with whipping cream.

5. Bake 15 to 20 minutes until peach mixture begins to bubble and crust is golden.

Extra dough can be baked as biscuits.

Remaining whipping cream can be whipped and serve with the cobbler.
