HUNGARIAN GOULASH 
2 lbs. lean beef or stewing, cut into 1-inch cubes
2 lg. purple onions, thinly sliced
1 med.-size green pepper, chopped
1/4 c. melted butter
1 tbsp. paprika
1/4 c. tomato paste
1/2 c. dry red wine
About 2 c. beef broth
Salt to taste
Hot cooked noodles or rice

Saute meat, onion and green pepper in butter until vegetables are tender. Add remaining ingredients except noodles; cover and simmer over low heat 1 1/2 to 2 hours or until meat is tender. Additional broth may be added, if necessary, during cooking. Serve over noodles or rice. Yield: 4 to 5 servings.
