POTATO, CHEESE AND BACON
CASSEROLE
 
8 med. potatoes, cooked, peeled and diced
1/2 lb. sliced bacon cut in 1 inch pieces
1 lb. processed American cheese sliced and cut into strips
1 c. mayonnaise
1/2 tsp. salt
1/2 tsp. pepper
1/2 c. chopped onions
1/4 c. sliced olives

Preheat oven to 350 degrees. Butter a 9 x 13 baking dish. Fry bacon until limp. Remove bacon with slotted spoon. Drain and set aside. Combine potatoes, cheese, mayonnaise, onion, salt, and pepper. Spoon into prepared dish. Sprinkle with bacon and olives. Bake uncovered 1 hour or until heated through.
