DATE NUT MUFFINS 
1 c. chopped dates
1 c. water
1/2 c. butter
1 c. sugar
1 egg
1 tsp. vanilla
1 2/3 c. self-rising flour
1 c. chopped pecans

Bring dates and water to a boil, then allow to cool completely. Cream butter and sugar. Add egg, vanilla, flour and pecans. Mix as little as possible to combine. Add cold boiled date mixture and mix lightly.

Bake in muffin tins at 425°F 25-30 min. or until tops are dark.
